Oven roasted sweet potato cubes
Our favorite way to eat sweet potatoes!
Ingredients
- Sweet potatoes (about 8 oz per serving)
- Your favorite high temperature oil (I like bacon grease or safflower oil and a bit of coconut oil)
- Spices: smoked paprika, salt and pepper (you can try other spices like cumin, dill or curry powder but I like to keep it simple to let the sweet potato flavor shine through)
Directions
- Preheat oven to 425F.
- Cut sweet potatoes into 1-2″ cubes.
- Pour enough oil into a baking pan to thinly cover the bottom (stainless or enamel will give a better crust on the potatoes than glass). Use a pan big enough so the potatoes can be in one layer.
- Put diced sweet potatoes in baking dish and toss to coat with oil (add more oil if needed).
- Sprinkle potatoes with seasoning to taste and give them another shake. Then spread them out until they are in one layer on the bottom of the pan.
- Bake for 30-45 minutes, stirring every 10-15 minutes, adding a little more oil if the bottom of the pan is getting dry.
- Potatoes are done when a fork pierces them easily and the outsides are crispy brown. If they are starting to brown too fast before they are soft, reduce oven temperature to 400F.
