Simple roasted squash

Butternut squash is sweet and flavorful, and it’s simple to prepare as a side dish. Here are two options: mashed or cubed.

Mashed squash

Ingredients

  • 1 butternut squash
  • Butter and/or maple syrup to taste

Directions

  1. Preheat oven to 425 degrees F.
  2. Cut squash in half the long way and scoop out the seeds.
  3. Place the two halves of the squash cut side down in a baking pan. Put a little water in the bottom of the pan to keep them from burning.
  4. Place in the oven and roast until a fork easily enters the flesh, around 30-45 minutes.
  5. Turn the squash halves over and scoop out the flesh with a spoon.
  6. Mix and mash in a bowl with butter and/or maple syrup.
  7. Enjoy!

Roasted cubed squash

Ingredients

  • 1 butternut squash
  • 2 garlic cloves
  • 2 T olive oil
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees F.
  2. Peel squash, cut in half, scoop out seeds and and cut into cubes.
  3. In a baking pan, toss squash cubes with olive oil and garlic. Season with salt and pepper.
  4. Spread out squash cubes so they are not on top of each other.
  5. Roast until squash is tender and lightly browned, 25-30 minutes.
  6. Enjoy!
