Tofu reubens
We eat a lot of pita bread sandwiches. One of our favorites are tofu reubens. You could certainly make these with meat instead of tofu. We just like them with tofu. This recipe for homemade thousand island dressing is so much better than the bottle you can buy at the store.
Ingredients
Pita bread (or other bread)
Tofu
Coconut oil
Old bay, smoked paprika, cumin and/or other spices you like
Sauerkraut (cabbage or cabbage/carrot/onion kraut)
Swiss cheese, sliced
Onion, sliced (optional)
1 clove garlic, pressed
1/4 cup plus 1 T minced pickle
1 1/2 tsp lemon juice
1/2 cup mayo
2 T catsup
1/2 hard boiled egg, minced
A squirt of sriracha
Directions
- Fry the tofu. Slice tofu around 1/2 inch thick. Heat coconut oil in a frying pan. Add tofu slices. Sprinkle with spices. Be patient. We like it better when the tofu gets a little crispy on each side. This takes a little while.
- Make the thousand island dressing. Mix the garlic, pickle, lemon juice, mayo catsup, hard boiled egg and sriracha.
- Warm up the pita bread in a 350 degree oven for five minutes.
- Assemble the sandwiches with the fried tofu, swiss cheese, kraut, thousand island and optional sliced onion.
